We’ll explore an assortment of lesser-known French classics, including deeply caramelized canelés, buttery financiers, shell-shaped madeleines, thick and crumbly palets bretons, rum-soaked almond gâteau Nantais, cloud-like merveilleux, rich fondant au chocolat, and other treasures from the French pastry case.
Along the way, we’ll explore the techniques, traditions, textures, and regional quirks that make these deceptively simple pastries so good. No advanced pastry experience is necessary—just come hungry and ready to salute your new favorites.
