Next-Level French Pastry is an ever-changing exploration of the more elaborate, unusual, beautiful and delicious art of French pastry. Depending on season, whim, and inspiration, we might tackle kouign-amann, bicolor pastries, chocolate puff pastry, bostock, pain aux whatever’s-in-season, flavored laminations, inverse puff, laminated brioche, or whatever technique currently has our attention.

The exact lineup changes from class to class, so even repeat students can expect something new. Rather than following a fixed menu, we’ll choose projects based on season, whim, inspiration, and the techniques we most want to explore.

You don’t need to have taken our Croissants class, and you don’t need advanced pastry experience to join us. We’ll have doughs prepared in advance and standard lamination will already be done, so we can spend our class time on the interesting parts: unusual techniques, fillings, shaping, decoration, and variations on classic methods. When the lamination itself is part of what makes a pastry special—think sugar-laminated kouign-amann, flavored butter blocks, or bicolor doughs—we’ll do it together. We’ll happily answer questions as we go, but this class won’t include a lengthy introduction to bread dough or the fundamentals of standard lamination.

Croissants may get all the attention, but the French bakery is full of spectacular pastries that deserve a little more glory. Unsung Heroes of the French Bakery celebrates the wonderful cakes, cookies, and pastries that somehow never became American household names.

We’ll explore an assortment of lesser-known French classics, including deeply caramelized canelés, buttery financiers, shell-shaped madeleines, thick and crumbly palets bretons, rum-soaked almond gâteau Nantais, cloud-like merveilleux, rich fondant au chocolat, and other treasures from the French pastry case.

Along the way, we’ll explore the techniques, traditions, textures, and regional quirks that make these deceptively simple pastries so good. No advanced pastry experience is necessary—just come hungry and ready to salute your new favorites.

French Confectionery Magic explores the delicious little bit of alchemy that happens when France gets its hands on fruit, sugar, nuts and chocolate. We’ll make an assortment of traditional confiserie, which might include jewel-like pâtes de fruits, almondy calissons, chewy nougat, chocolate mendiants, candied orangettes, crisp florentines, and the extraordinary slow transformation of fresh fruit into fruit confit.

Some confectionery processes take days—or even weeks—so we’ll have a little help from our past selves, with ingredients prepared at different stages so you can see and work with the entire process without moving into the bakery for a fortnight. Along the way, we’ll explore candy temperatures, crystallization, fruit preservation, chocolate, nuts, and the techniques behind some of France’s most beautiful traditional sweets.

No confectionery experience is necessary. Come prepared to play with sugar, learn some genuinely fascinating techniques, and leave with a rather unreasonable quantity of very fancy candy.
