We’ll also explore filled pastas\, preparing everything from light\, creamy ricotta-stuffed ravioli to decadent braised short rib agnolotti\, each one a small package of comfort and flavor. \nAlong the way\, we’ll discuss technique\, tradition\, and tips for success\, from kneading methods to how different flours change texture and bite.
