SUMMARY:Next-Level French Pastry
DESCRIPTION:Next-Level French Pastry is an ever-changing exploration of the more elaborate\, unusual\, beautiful and delicious art of French pastry. Depending on season\, whim\, and inspiration\, we might tackle kouign-amann\, bicolor pastries\, chocolate puff pastry\, bostock\, pain aux whatever’s-in-season\, flavored laminations\, inverse puff\, laminated brioche\, or whatever technique currently has our attention. \nThe exact lineup changes from class to class\, so even repeat students can expect something new. Rather than following a fixed menu\, we’ll choose projects based on season\, whim\, inspiration\, and the techniques we most want to explore. \nYou don’t need to have taken our Croissants class\, and you don’t need advanced pastry experience to join us. We’ll have doughs prepared in advance and standard lamination will already be done\, so we can spend our class time on the interesting parts: unusual techniques\, fillings\, shaping\, decoration\, and variations on classic methods. When the lamination itself is part of what makes a pastry special—think sugar-laminated kouign-amann\, flavored butter blocks\, or bicolor doughs—we’ll do it together. Come hungry—there’s a lot of ground to cover between the Andes and the southern coast\, and we intend to eat our way through a fair bit of it. \n\n\n\n\n\n\n\n\n\n  \nBYOB \n  \nWe suggest a cool-climate white or light red wine — perhaps a Chilean Chardonnay\, Torrontés\, or Pinot Noir. DESCRIPTION:Head for the mountains with our Alpine Date Night Cooking Experience\, featuring some of our favorite dishes from Switzerland\, Austria\, Bavaria\, and the surrounding Alps. \nWe’ll begin with bubbling cheese fondue with plenty of good things for dipping\, followed by a Swiss mountain salad with greens\, hard-boiled eggs\, herbs\, and a bright dressing. You’ll also make bread and cheese dumpling soup\, which is approximately as cozy as a bowl of soup can get. \nFor the main course\, we’ll slow-roast a beautiful skin-on pork belly until tender\, with shatteringly crisp skin\, and serve it with beer gravy and potatoes. \nAnd because the Austrians have very good ideas about dessert\, we’re making two. You’ll learn Kaiserschmarrn\, a fluffy caramelized pancake torn into pieces and dusted with powdered sugar\, as well as Salzburger Nockerl\, a dramatic baked soufflé traditionally shaped to resemble the mountains surrounding Salzburg. \nAlong the way\, you’ll learn plenty of useful techniques (from fondue and dumplings to getting that pork skin properly crisp) and sit down together to enjoy everything you’ve made. It’s hearty\, generous mountain food\, exactly right for a chilly evening. \nCome hungry. Seriously. \n\n\n\n\n\n\n\n\n\n  \nBYOB \n  \nWe suggest a crisp Grüner Veltliner\, a refreshing German Riesling\, a bold Austrian Blaufränkisch\, or a malty Bavarian Dunkel beer.
