SUMMARY:French Confectionery Magic Class
DESCRIPTION:French Confectionery Magic explores the delicious little bit of alchemy that happens when France gets its hands on fruit\, sugar\, nuts and chocolate. We’ll make an assortment of traditional confiserie\, which might include jewel-like pâtes de fruits\, almondy calissons\, chewy nougat\, chocolate mendiants\, candied orangettes\, crisp florentines\, and the extraordinary slow transformation of fresh fruit into fruit confit. \nSome confectionery processes take days—or even weeks—so we’ll have a little help from our past selves\, with ingredients prepared at different stages so you can see and work with the entire process without moving into the bakery for a fortnight. Along the way\, we’ll explore candy temperatures\, crystallization\, fruit preservation\, chocolate\, nuts\, and the techniques behind some of France’s most beautiful traditional sweets. \nNo confectionery experience is necessary. Come prepared to play with sugar\, learn some genuinely fascinating techniques\, and leave with a rather unreasonable quantity of very fancy candy. \n\n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.  This is a great experience to share with friends\, family\, neighbors\, coworkers\, frenemies\, and anybody you want to share the cooking and eating with! \n\n\n\n\n  \nRules & Policies \n  \nComplete Event & Ticket Policies can be found here. Please read them!  \n\n\n\n\n  \nHave More Questions? \n  \nCheck our FAQ\, and then send us a message if you still have questions!

SUMMARY:Proper British Date Night Cooking Experience
DESCRIPTION:Our Proper British Date Night Cooking Experience takes on some of the classics of British cooking\, including one of the great dinner-party centerpieces: Beef Wellington. \nYou’ll make your own individual Beef Wellingtons\, wrapping tender beef with mushrooms and flaky puff pastry\, and learn how to get the pastry crisp and golden while keeping the beef properly cooked. Alongside\, we’ll prepare honey-glazed roasted parsnips\, champ (creamy mashed potatoes with butter and scallions)\, and asparagus with homemade hollandaise. \nFor dessert\, we’ll make sticky toffee pudding with whiskey and warm toffee sauce\, because the British are very good at puddings and there is no reason to argue with them about it. \nAlong the way\, you’ll learn plenty of useful techniques for working with puff pastry\, cooking beef\, making hollandaise\, and getting the whole dinner to the table at the same time. It’s hearty\, properly British\, and an excellent dinner for a chilly evening. \n  \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n\n  \nBYOB \n  \nWe suggest a Pinot Noir\, a merlot-heavy Bordeaux\, or a late-harvest Riesling. If beer’s your thing\, we suggest an English brown ale or a dry Irish stout. And of course\, a gin and tonic is always a British staple! \n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person but don’t let that stop you. SUMMARY:Unsung Heroes of the French Bakery Baking Class
DESCRIPTION:Croissants may get all the attention\, but the French bakery is full of spectacular pastries that deserve a little more glory. Unsung Heroes of the French Bakery celebrates the wonderful cakes\, cookies\, and pastries that somehow never became American household names. \nWe’ll explore an assortment of lesser-known French classics\, including deeply caramelized canelés\, buttery financiers\, shell-shaped madeleines\, thick and crumbly palets bretons\, rum-soaked almond gâteau Nantais\, cloud-like merveilleux\, rich fondant au chocolat\, and other treasures from the French pastry case. \nAlong the way\, we’ll explore the techniques\, traditions\, textures\, and regional quirks that make these deceptively simple pastries so good. No advanced pastry experience is necessary—just come hungry and ready to salute your new favorites.

SUMMARY:Alpine Escape Date Night Cooking Experience
DESCRIPTION:Head for the mountains with our Alpine Date Night Cooking Experience\, featuring some of our favorite dishes from Switzerland\, Austria\, Bavaria\, and the surrounding Alps. \nWe’ll begin with bubbling cheese fondue with plenty of good things for dipping\, followed by a Swiss mountain salad with greens\, hard-boiled eggs\, herbs\, and a bright dressing. You’ll also make bread and cheese dumpling soup\, which is approximately as cozy as a bowl of soup can get. \nFor the main course\, we’ll slow-roast a beautiful skin-on pork belly until tender\, with shatteringly crisp skin\, and serve it with beer gravy and potatoes. \nAnd because the Austrians have very good ideas about dessert\, we’re making two. You’ll learn Kaiserschmarrn\, a fluffy caramelized pancake torn into pieces and dusted with powdered sugar\, as well as Salzburger Nockerl\, a dramatic baked soufflé traditionally shaped to resemble the mountains surrounding Salzburg. \nAlong the way\, you’ll learn plenty of useful techniques (from fondue and dumplings to getting that pork skin properly crisp) and sit down together to enjoy everything you’ve made. It’s hearty\, generous mountain food\, exactly right for a chilly evening. \nCome hungry. Seriously. \n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person but don’t let that stop you. Our classes are great to take with friends\, family\, romantic partners\, or anyone who enjoys good food and lots of fun.  \n\n\n\n\n  \nRules & Policies \n  \nComplete Event & Ticket Policies can be found here. Please read them!  \n\n\n\n\n  \nHave More Questions? \n  \nCheck our FAQ\, and then send us a message if you still have questions!

SUMMARY:Christmas Cookies of the World
DESCRIPTION:Christmas Cookies of the World\nA Baker’s Dozen from Seven Continents!\nAround the world in eighty days? Amateur hour. We’re going around the world in thirteen cookies\, and we’re doing it in a single afternoon! \nJoin us in the Pickwick & Cherry Teaching Kitchen for a gloriously ambitious international Christmas baking adventure as we explore the traditions\, techniques\, and irresistible treats of holiday kitchens around the globe. From familiar favorites to wonderfully obscure regional specialties\, we’re making a baker’s dozen of different cookies and confections representing all seven continents! \nWe’ll travel to Germany for fragrant\, spiced Lebkuchen\, Serbia for delicate\, jam-filled Vanilice\, and the Middle East for beautifully decorated Ma’amoul. We’ll discover Portugal’s unusual sweet-potato-and-almond Broas Castelares and Austria’s charming Eisenbahner\, with their piped marzipan and jewel-bright jam. We’ll fry up South African Koeksisters and Danish Klejner\, explore New Zealand’s chocolatey Afghans and Colombia’s dulce-de-leche-filled Alfajores\, and make a few more stops along the way. \nWe’ll even venture all the way to Antarctica. Because apparently six continents just aren’t enough. \nAlong the way\, we’ll roll\, shape\, pipe\, fill\, fry\, bake\, decorate\, and\, of course\, taste our way through an extraordinary assortment of holiday treats. With much of the advance preparation already done\, we’ll concentrate on the fascinating techniques\, distinctive flavors\, and culinary traditions that make each one special. \nYou’ll leave with a magnificent international assortment of thirteen different holiday cookies\, plenty of new baking skills\, and enough inspiration to make your Christmas cookie plate the most interesting one in the neighborhood. \nThirteen cookies. Seven continents. Three delicious hours. \nIt’s a small world\, but it’s positively overflowing with cookies! \n\n\n\n\n\n\n\n \n\n\n\n\n\n\n\n \n\n\n\n\n\n\n\n \n\n\n\n\n\n\n\n \n\n\n\n\n\n\n\n\n\n\n\n\n\n\n  \nADMIT\nONE \n  \nEach ticket admits one person\, but don’t let that stop you! Our classes are even more fun with friends\, family\, romantic partners\, or anyone who enjoys good food and a little flour-dusted adventure. \nYoung bakers ages 8 and up are welcome when accompanied by a participating adult. Everyone needs their own ticket\, regardless of age. \n\n\n\n\n  \nThe Teaching\nKitchen \n  \nWelcome to the wonderfully busy\, occasionally chaotic world of Pickwick & Cherry’s working bakery! \nOur Teaching Kitchen is right in the middle of the action. Expect flour-dusted countertops\, busy baking racks\, and plenty of delicious things in progress. We’ll provide the ingredients\, aprons\, equipment\, expert instruction\, and a generous helping of Christmas cheer! \n\n\n\n\n\n\n  \nArrival\nTime \n  \nPlease allow a little extra time for parking in Rountree. Because we’re a busy working bakery without an indoor waiting area\, doors open just 5 minutes before class begins. \nIf you arrive early\, you’re welcome to relax in our sheltered (but unheated!) garden gazebo\, or explore the wonderful shops in our neighborhood. We’ll be ready to welcome you—and put you to work—right on time! \n\n\n\n\n  \nRules &\nPolicies \n  \nComplete Event & Ticket Policies can be found here. Please read them!  \nHave more questions?
Check our FAQ\, and then send us a message if you still have questions!
