For dessert\, we’ll finish the journey west with saffron-cardamom ice cream with honeyed figs and walnuts. \nAlong the way\, we’ll talk about the places\, people and traditions behind the food\, and how ingredients and cooking techniques traveled and changed along the Silk Road. Our Uncorked Portuguese Date Night Cooking Experience brings some of those flavors together for a hands-on evening of cooking and eating. \nWe’ll begin with rustic Portuguese cornbread with goat cheese and olive tapenade\, then sear diver scallops with sweet pea and mint purée. For the main course\, we’ll make duck with orange and port wine sauce\, served with crispy roasted potatoes. \nFor dessert\, we’ll make a rich olive oil chocolate mousse\, pairing dark chocolate with one of Portugal’s most important ingredients. \nAlong the way\, you’ll pick up useful techniques for cooking seafood\, duck\, sauces and more\, with plenty of time to sit down and enjoy what you’ve made. You’ll also make bread and cheese dumpling soup\, which is approximately as cozy as a bowl of soup can get. \nFor the main course\, we’ll slow-roast a beautiful skin-on pork belly until tender\, with shatteringly crisp skin\, and serve it with beer gravy and potatoes. \nAnd because the Austrians have very good ideas about dessert\, we’re making two. You’ll learn Kaiserschmarrn\, a fluffy caramelized pancake torn into pieces and dusted with powdered sugar\, as well as Salzburger Nockerl\, a dramatic baked soufflé traditionally shaped to resemble the mountains surrounding Salzburg. \nAlong the way\, you’ll learn plenty of useful techniques (from fondue and dumplings to getting that pork skin properly crisp) and sit down together to enjoy everything you’ve made. It’s hearty\, generous mountain food\, exactly right for a chilly evening. \nCome hungry.
