SUMMARY:The Art of Phyllo Baking Class
DESCRIPTION:Phyllo has a bit of a bad reputation. It tears. It dries out. It behaves badly if ignored. And yet\, some of the most beloved pastries in the world rely on it. \nIn this hands-on workshop\, we’re demystifying phyllo once and for all as we bake our way through phyllo’s full range of possibilities. You’ll learn to build classic nut baklava in multiple styles\, from crisp layered triangles to rolled sarma and dramatic midye (mussel) baklava formed from hand-stretched sheets. We’ll prepare spiral bourek and tiropitakia for the savory table\, and we’ll turn even our “mistakes” into fragrant orange-soaked portokalopita. \nBy the end of class\, you’ll understand how phyllo behaves\, how syrup absorption works\, and how to approach these pastries with confidence instead of hesitation. (And then\, of course\, we will send you home with a big box of your handiwork!)  \n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.  This is a great experience to share with friends\, family\, neighbors\, coworkers\, frenemies\, and anybody you want to share the cooking and eating with! \n\n\n\n\n  \nRules & Policies \n  \nComplete Event & Ticket Policies can be found here. Please read them!  \n\n\n\n\n  \nHave More Questions? \n  \nCheck our FAQ\, and then send us a message if you still have questions!

SUMMARY:Sourdough & Naturally Leavened Breads Baking Class
DESCRIPTION:Sourdough & Naturally Leavened Breads Baking Class\nWe celebrate the art\, science\, and flavor of naturally leavened breads in our Sourdough & Naturally Leavened Breads Baking Class. Together\, we’ll explore the fascinating world of wild yeast\, long fermentation\, and rustic baking traditions that bring unmatched character and taste to every loaf. \nWe’ll begin with the foundation: an artisan sourdough\, learning the steps of mixing\, folding\, proofing\, and baking that create the chewy crust\, open crumb\, and deep tang that make sourdough beloved around the world. From there\, we’ll branch out into variations that highlight how versatile naturally leavened breads can be. We’ll bake an aromatic asiago and onion sourdough\, a savory loaf filled with bold\, cheesy flavor and caramelized sweetness. \nWe’ll also step outside sourdough-is-savory box and prepare South African mosbolletjies\, a fragrant\, lightly sweet bread flavored with anise and enriched with all of the dairy products we have. (Not really\, but it feels like it!) This bread was our all-time top seller when we used to sell at the Farmer’s Market — even among people who couldn’t pronounce it (so\, basically\, everyone.)  \nIn addition\, we’ll put every bit of our starter to good use by turning discarded sourdough into crispy\, delicious crackers. These golden\, savory bites reduce waste while adding another skill to our repertoire. \nAlong the way\, we’ll cover essential techniques\, from starter maintenance to shaping methods and decorative techniques\, so that sourdough feels approachable and exciting. Whether rustic or refined\, savory or slightly sweet\, every bread we bake together will deepen our appreciation for this timeless craft. \nBy the end\, we’ll leave with a collection of fresh loaves\, crackers\, and the confidence to keep baking sourdough at home for years to come. And yes\, we will give you starter to take home!  \n\n\n\n\n\n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.

DESCRIPTION:We celebrate the timeless art of fresh pasta-making in Pasta Perfecta\, a fully hands-on workshop where flour\, water\, and creativity come together to form something extraordinary. Together\, we’ll explore the many doughs\, shapes\, and colors that make handmade pasta endlessly exciting. \nWe’ll begin by mixing a variety of doughs — from sturdy semolina to silky Neapolitan-style flour — and experimenting with natural colorants like spinach\, beet powder\, carrot\, tomato\, black garlic\, and occasionally saffron. You’ll see how simple ingredients transform into vibrant\, flavorful doughs that reflect both Italian tradition and personal imagination. \nFrom there\, we’ll roll and shape pasta by hand\, learning how to form ribbons\, twists\, and sheets that can be cut\, layered\, or stuffed. Using both classic rollers and modern cutters\, we’ll create pastas in multiple styles — from delicate tagliatelle and pappardelle to filled varieties like ricotta ravioli or short rib agnolotti. \nAlong the way\, we’ll talk technique\, texture\, and tradition — from kneading and resting to how different flours and hydration levels change the final bite. This isn’t a meal\, but an immersive\, tactile experience where you’ll leave with your own eclectic collection of fresh pastas to cook or dry at home. \nWhether you’re brand new to pasta or deep into your culinary journey\, Pasta Perfecta is a joyful afternoon of flour\, laughter\, and edible art. \n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.

SUMMARY:Pretzel Baking Class
DESCRIPTION:Get Ready for Pretzel Baking Class!\nWe roll up our sleeves and dive into the world of handmade pretzels in our crowd-fave Pretzel Baking Class. This fun\, hands-on workshop is all about mastering the dough\, the twist\, and the bake that makes pretzels so irresistible\, while also learning a few tricks that bakers have passed down for generations. \nWe’ll begin with authentic Bavarian lye-dipped pretzels\, the kind that deliver that iconic chewy crust and deep\, golden shine. Lye can be dangerous if handled incorrectly\, but we’ll provide the goggles\, the know-how\, and the confidence to teach you how to use lye safely. It’s not nearly as scary as it sounds\, and the delicious results are absolutely worth it. \nNext\, we’ll bake Scandinavian sweet pretzels\, soft\, sweet\, and lightly iced\, perfect for an afternoon treat or a cozy breakfast. We’ll also make Parmesan peppercorn pretzels\, savory and bold. It’s basically the best possible garlic bread—but with all the satisfying chew and character of a real pretzel. \nAlong the way\, we’ll tackle the famous flippy-twisty pretzel fold (English doesn’t really have a word for it\, but German does: Brezelschlingen)\, breaking it down step by step until the classic shape feels easy and natural. We’ll share tips on dough handling\, shaping\, flavor variations\, and baking methods so that pretzels can become part of our own kitchen repertoire. \nBy the end of class\, we’ll leave with a generous pile of fresh\, warm pretzels\, new skills\, and maybe even a new party trick to share. Whether sweet or savory\, pretzels are always a crowd-pleaser—and making them together makes them even better. \n\n\n\n\n\n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n \n\n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.

DESCRIPTION:If you’ve ever dreamed of pulling a golden loaf of bread from your own oven\, this class is the perfect place to start! In this friendly\, hands-on workshop\, we’ll explore the foundations of great bread baking — from mixing and kneading to shaping\, proofing\, and baking — and make it all approachable\, practical\, and delicious. \nYou’ll learn how flour\, water\, yeast\, and salt come together to form doughs with very different personalities\, and how to adjust hydration and fermentation for the best flavor and texture. We’ll work through three basic doughs that can become a whole bakery’s worth of breads: ciabatta\, focaccia\, baguettes\, Sicilian loaves\, bread bowls\, and more. \nAlong the way\, you’ll discover how to tell when your dough is ready to move on to the next stage\, why moisture matters\, and what makes a great crust vs. a soft crumb. You’ll taste fresh bread straight from the oven and go home with an armload of your own creations — plus recipes\, techniques\, and the confidence to keep baking at home. \nWhether you’re brand new to bread or looking to strengthen your skills\, this class will give you the tools you need for baking success. \n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.

SUMMARY:Sweet & Savory Seasonal Tarts Baking Class
DESCRIPTION:Crisp pastry\, silky fillings\, vibrant fruit\, and bold savory flavors — this hands-on baking workshop is devoted to mastering the art of the tart. \nWe’ll work with sweet tart dough and free-form pastry\, learning how to blind bake\, build stable custards\, work with fresh fruit\, and assemble beautiful sweet and savory tarts. The exact flavors shift with the season and the market — think bright citrus\, rich chocolate\, rustic fruit galettes\, or savory combinations with herbs and cheese. \nBy the end of class\, you’ll have a box full of tarts to take home (sharing is optional!)\, along with the confidence to adapt the techniques to whatever ingredients you have on hand. \nNo two sessions are exactly the same — and that’s half the fun. \n\n\n\n\n\n\n\n\n\n  \nADMIT ONE \n  \nEach ticket admits one person\, but don’t let that stop you.

SUMMARY:Classic American Pies
DESCRIPTION:Pie is the great American dessert — flaky crust\, bubbling fruit\, bright citrus\, and clouds of toasted meringue. In this hands-on baking class\, we’ll dive into the techniques behind some of the most beloved pies in the American repertoire. \nWe’ll begin with the foundation of great pie: an all-butter crust that’s tender\, flaky\, and easy to work with. You’ll learn how proper mixing\, resting\, and rolling create the delicate layers that make a pie crust truly exceptional. \nFrom there we’ll build four classic pies that showcase different techniques and textures. We’ll make a blueberry lattice pie\, learning how to properly thicken juicy fruit fillings and weave a beautiful lattice top. A traditional cherry pie brings the deep\, bright flavor that defines summer fruit pies. Then we’ll shift to custard pies with a vibrant key lime pie — smooth\, tangy\, and perfectly balanced. \nFinally\, we’ll finish with the showstopper: lemon meringue pie. You’ll learn how to cook a glossy lemon filling and top it with billowy meringue that toasts into golden peaks. \nAlong the way we’ll cover the small details that make a big difference: preventing soggy bottoms\, controlling fruit juices\, shaping decorative crusts\, and achieving the perfect bake. \nWhether you’re baking for summer gatherings\, holiday tables\, or simply because pie makes people happy\, this class will give you the confidence and technique to make beautiful\, delicious pies at home. \nCome ready to roll dough\, fill pies\, and taste enthusiastically.

Over the course of the week\, campers will mix\, laminate\, pipe\, fill\, glaze\, and decorate — building both skill and confidence along the way. \nThroughout the week\, students may explore:\n\nCroissants\, danishes & puff pastry (laminated doughs)\nBread baking — challah\, brioche\, focaccia and other enriched loaves\nPie & fruit tarts — classic short crust pastry\nÉclairs & cream puffs (pâte à choux)\nMany kinds of cookies — chocolate chip\, checkerboard\, and royal icing decorated sugar cookies\nChocolate work — transfer sheets\, cocoa butter painting\, dipped marshmallows & confections\nFrozen desserts — ice cream and ice cream sandwiches\nPhyllo Dough — baklava\, spanokopita\, and more\nHandmade pastas & tortillas\nand other delicious baked goods\n\nCamp is hands-on and technique-driven. Students should be comfortable standing\, following multi-step instructions\, and working cooperatively in a focused kitchen environment. We will prepare and each lunch together daily\, and each baker will take home a considerable amount of baked goods each day.  \nBecause of the size and nature of our space (10 students maximum)\, placement is determined through application. Our goal is to assemble small groups of curious\, capable young bakers who are genuinely excited to learn. \nIdeal campers are students who: \n\nEnjoy baking at home\nTake pride in precision\nAre willing to try again when something doesn’t work\nCan stay engaged through longer projects\nAre excited to develop real skills\n\nNot every applicant will be the right fit at this time. \nApplications will be reviewed and families notified of placement prior to registration. \nApply Now!
